As a former non-commissioned officer of the French Foreign Legion, I now cook as I once served: with discipline, passion, and respect. Each dish tells a story — mine, those of my brothers-in-arms from all over the world, and the traditions we shared on missions, around a bivouac or in the mess hall. Many of my recipes were passed down by comrades — some still alive, others resting in peace. All left me with a taste, a lesson, a memory.
