I grew up eating unhealthy country cookin'. It is part of the culture where I live. Another part of my area's culture is chronic disease, like heart disease, lung disease, cancer and an extraordinary amount of diabetes.
I developed high cholesterol and high blood pressure and was on my way to possible heart disease. My doctor recommended a plant-based diet. It was a learning curve for this country girl, but I wanted to age with a good quality of life, so I educated myself and made the switch.
To my surprise, I lost 60 pounds and my doctor eventually discontinued my cholesterol and blood pressure meds. Most surprising was I fell in love with the food. I never weighed or measured my food, I just ate plants. My body regained so much energy. I finally stopped the yo-yo dieting I had done for decades of my life. I LOVE this food!
Now I share my recipes and tips with others. If we want to see change, we must change. There is POWER in our PLATES. What we eat DOES matter.
